Recipe time...
Ok, this dish is pretty simple to prepare and good for using up leftovers. It actually originated from China(if I remember correctly) and brought to Thailand by the original Thais. This one is gonna take about 15 mins to feed 4 people(depends on ur intake capacity).
So here goes the ingredients:

  • 2 beaten eggs
  • 4 tbsp. vegetable oil
  • half medium onion, peeled and chopped
  • 1 lb. pork loin, thinly sliced
  • 1 clove garlic, finely chopped
  • 1 tomato, sliced into 8 wedges
  • 2 green onions, thinly sliced
  • 1 tbsp. fish sauce (or soy sauce)
  • 1 tsp. sugar (don't forget)
  • half tsp. pepper
  • half tsp. cayenne pepper (if u want)
  • 4 c. cold cooked rice
Procedure:
  1. Heat 1 tbsp. oil over medium heat for 1 min on a wok, then add the eggs and scramble them. Set it aside on a plate and clean the wok.
  2. Heat 3 tbsp. oil over medium heat for 1 minute. Add onions, pork, and garlic and stir like hell. Let it cook for about 2 mins stirring when u want to.
  3. Add tomato and green onions and stir 'here n there' for 2 mins until the tomatoes soften.
  4. Add fish sauce, sugar, pepper, and cayenne pepper and stir again and again and again.
  5. Add rice, breaking apart any clumps. Mix them up and cook for about 7 mins.
  6. Add scrambled eggs and mix again.
  7. Put on plates and serve.
